Cederberg. Forming part of the highest lying vineyards in South Africa, the oldest farm in the Cederberg has been home to the Du Toit Family for five generations.
Elegant Shiraz expressing red fruit purity of red cherries and sweet vanilla spice. Smooth ripe tannins leaving a silky sensation on the palate. 15 months in oak, shows good integration. Well paired with a matured sirloin steak, venison or an oxtail stew.
Soil Types: Gravel / Coffee stone
Fermentation: Cold maceration for 2 days, Inoculate with yeast, pump over every 6 hours, fermentation for 7 days at 25oC, extended skin contact for 14 days. Malolactic fermentation in new 225L French oak barrels.
Barrel aging: 31% new, 31% 2nd fill, 31% 3rd fill and 7 % 4th fill barrels for 15 Months
Optimum drinking time: 4 – 6 years after release
